Our variety of Lechín olive or Zorzaleña as it is also known is native of Andalusia and our crops come from the Greenway of the Sierra, that is, in the municipal terms of Coripe from Sevilla and Puerto Serrano from Cádiz, its name comes from the whitish color of his flesh and oily must that looks like milk.
They are a variety of olive tree that is very resistant to lack of water due to its rusticity and the large roots that these possess, besides, it is also very resistant to sudden seasonal temperature changes, which makes them a very attractive variety.
Our oil has a greenish yellow color, with a dense and unctuous texture, and a turbidity resulting from unfiltered extraction. As for the flavor, it has a medium fruity green with an aftertaste of herbs / grass, artichoke, with notes of green almonds that in the mouth is very pleasant for its intensity, and that to take in crude turns out to be an ideal product. It has a medium spicy touch, medium bitterness and medium-low sweetness. It has an acidity of less than 0.3º (depending on the season) and we are sure that it is an oil that will delight anyone who tastes it.

The mill was founded in 1961, being then the second mill created in the town, since there was a private mill in operation and some small mills in the surrounding farms. With the passage of time, new technologies and the demands of the market, these mills were disappearing, leaving only the Sociedad Cooperativa Andaluza Oleícola Coripeña, which currently has more than 600 members.
Since its foundation, the cooperative has not stopped its activity at any time, grinding each campaign without interruption, achieving a positive development both in the number of partners and in the adaptation to new technologies, to achieve a higher quality in the star product of Andalusia : The virgin olive oil.
